Finally got some Jus Rol Gluten free Pastry – Veganuary

After months of looking i finally got my hands on some Jus Rol Gluten Free Pastry, i have been a coeliac my whole life and puff pastry has always been a challenge for me and my mum. So whenever there is a new pastry mix or ready made pastry to try were there. When i heard Jus Rol were releasing a gluten free pastry i was very hopeful that it would also be dairy free and thank the allergy gods it was. So i spent months looking in all my local tescos and any Tesco i went to and finally this month (just in time for Veganuary) my local Tesco has stocked it.

I’ve never been able to just whip a tray bake up using a pastry sheet so i thought i would give that a go. Searching my fridge i came up with two different vegan tarts.


Tomato, Courgette and Garlic Cheese


Serves 3

A5 size rectangle of Puff Jus Rol

3 small tomatoes, sliced

Half Courgette, sliced

100g Sainsburys Dairy Free Garlic and Herb Soft cheese (any vegan soft cheese could be used)

Salt and Pepper

  1. Spread with garlic cheese and do a line of sliced tomatoes, line of courgettes and then another line of sliced tomatoes. Season with salt and pepper.
  2. Bake in oven as per the pack instructions.


Caramelised Onion and Mushroom


Roughly A5 size of Puff Pastry (mine is a circle as that’s what i had left)

2 Tablespoons of Caramelised Onion Chutney (Homemade or Jar)

4 mushrooms, sliced

Handful of Feta Cheese Crumbled (We used Sainsburys own)

Salt and Pepper

  1. Cover with the onion chutney, top with sliced mushrooms and Β then crumble the feta over the top.
  2. Bake as per the pack instructions.
