Mushroom Stroganoff – Veganuary

One of our many recipes we have made as part of Veganuary Month. We love mushrooms in our house even Astrid (granted she didn’t eat this but she has been unwell for nearly a week now so not eating a lot). We have really been enjoying Veganuary so far trying lots of new recipes and even new vegetables so hopefully you will enjoy this to:


Serves One Very Hungry Daddy, A Normal Mummy and a partially hungry toddler


15g Vitalite (or any dairy free Margarine butter replacement)

500g Mushrooms, sliced

2 Tablespoons Mustard ( I used the IKEA Mustard as we find these really sweet and yummy)

200g Violife Creamy (Vegan Cream Cheese Substitute)

2 Tablespoons Olive Oil

1 Onion, thinly sliced

4 garlic cloves, finely chopped

salt and pepper

Enough rice to serve three people ( i go for a handful per person)


  1. Put the rice in a pan and cover with boiled water about a 1cm above the rice. Boil for 5-7 minutes until partially cooked then cover and leave to steam. Take off the heat.
  2. Heat the Viatlite and oil, add the onions and cook until soft and starting to brown.
  3. Add the mushrooms to the pan and cook until softened and starting to brown. Then stir in the Violife and mustard. Heat slowly as if heated to fast vegan cream cheese can become very sour. Season to Taste with Salt and Pepper.
