Sweet Potato Hash – Amy

The Cold is drawing in and we have a new recipe from my regular Vegan Blogger Amy. A great way to start the day or a late night snack in these cold days, topped off with some of the new Sainsbury’s Dairy Free Range Cheeses. Hope you all enjoy i know i certainly will be making these this weekend ๐Ÿ™‚

Sweet Potato Hash- Serves 4 (or 2 very hungry people)

 

1 Sweet Potato

1 red onion

1 Table spoon of oil

Teaspoon of chilli powder

Teaspoon of cayenne pepper

Teaspoon of smoked paprika

Pepper to taste

 

Method

Grate the sweet potato- if you have a food processor I would certainly advocate using this. Unfortunately I only had a box grater which took a while- although it was good upper arm exercise!

Dice the red onion as small as you can.

Mix the diced red onion and sweet potato into a bowl. Add the oil and spices.

Heat a frying pan on a medium heat, covering the bottom of the pan with oil.

Once the pan is hot, take a spoonful of the mixture and press down in the pan. Flip when the side turns golden (should take approximately 5 minutes on each side).

 

I often serve these for breakfast, with some mushrooms grilled tomatoes. However, I did dollop some of Sainsburyโ€™s Garlic and Herb dairy free cream cheese and a slice (*ahem a slab*) of the Free From Wensleydale with cranberries on top.
